Ingredients for four people:
- 1 medium sized watermelon
- 1 block of feta
- 1/2 cucumber
- 1 avocado
- 2 tablespoons of cider vinegar
- 2 tablespoons olive oil
- 1 lime
- 1 large handful of fresh mint
- Cut the watermelon in half, remove the skin and cut into bite-sized pieces.
- Cut the cucumber into quarters.
- Cut the feta into cubes.
- Chop the mint.
- Pour all the chopped ingredients into a salad bowl.
- Season everything with vinegar, olive oil and lime juice.
- Salt and pepper.
