Fried green tomatoes
Ingredients:
- 3 medium green tomatoes
- 1 large egg
- 120 g buttermilk
- 60 grams of all-purpose flour, divided
- 80 grams of cornmeal
- 2 teaspoons kosher salt or 1 teaspoon fine salt
- Half teaspoon fresh black pepper
- A pinch of red pepper
- Avocado oil or other high heat vegetable oil, for frying
- Flake sea salt
Preparation:
- Cut the tomatoes into slices.
- Whisk together the eggs and buttermilk in a shallow bowl.
- Place half the dough on a medium plate. Mix the rest with the corn, salt, pepper and pepper in another.
- Dip one slice of tomato in plain flour, shake off excess, dip in egg mixture, then dip in cornmeal mixture until evenly coated and transfer to a plate. Repeat the process with the other tomato slices.
- Heat oil in a heavy pan. Remember that the oil needs to be very hot so that the tomatoes don’t absorb it. Gently place the tomatoes in the hot oil and cook for about 2 minutes on each side or until golden brown.

- Large garlic clove, halved
- Green tomatoes, cut into small wedges
- Oregano, you need a good amount
- A little basil
- Jalapeno, chopped
- Banana pepper or sweet pepper, thinly sliced
- Sun-dried tomatoes, chopped
- Onion, thinly sliced
- Extra virgin olive oil
- 1 tablespoon of honey
- Fig or balsamic vinegar (about 2 tablespoons)
- Salt and pepper
Preparation:
- Rub the inside of the salad bowl with garlic.
- Mix in the tomatoes and the next 6 ingredients.
- Drizzle with a vinaigrette made of oil, honey, vinegar, salt and pepper.

Ingredients:
- 200 grams of frozen peas
- 2 tablespoons cold-pressed coconut oil
- 3-4 medium yellow turnips, sliced
- 7-10 medium Brussels sprouts, sliced
- A little red pepper
- Half a teaspoon of grated ginger
- 2-3 cloves of garlic, grated
- 3-5 medium green tomatoes, chopped/chopped
- A handful of assorted mushrooms, chopped
- 1 large red onion, chopped
- A pinch of salt
- Chopped fresh parsley
Preparation:

Salsa with raw tomatoes
Ingredients:
- 5 small green tomatoes
- 1 jalapeño pepper (without seeds)
- 3 large cloves of garlic
- 1 medium white onion
- 1-2 bunches of coriander
- ½ teaspoon kosher salt
- 2 tablespoons lime juice
Preparation: Clean the vegetables and cut them into large pieces. Then place them on a baking sheet and grill on high heat for 4 to 5 minutes until they turn black. Flip them over and cook for another 5 minutes. Transfer everything to a food processor, along with the rest of the ingredients and blend until you get the desired consistency.
