It really is too good and it changes the traditional red fruit crumble!
Recipe for crème brûlée with red fruits
- 1 vanilla pod
- 500 ml of cream
- 6 egg yolks
- 100 g of white sugar
- 250 red fruits
- 6 tbsp. brown sugar
Split the vanilla pod in half and remove the seeds.
Heat the liquid cream with the vanilla pod and let it infuse over low heat.
Beat egg yolks with sugar and vanilla seeds until fluffy.
Remove the vanilla pod from the cream and gradually pour it into the previous mixture, mixing continuously. Pour the cream into ramekins and add the red fruit (leave some for decoration).
Bake in the oven and bake for 30 to 35 minutes at 160°C. Allow to cool and refrigerate for at least 4 hours.
Sprinkle with brown sugar, then caramelize with a blowtorch or for a few minutes under the broiler. Decorate with berries and serve immediately!
