July to September is peak green bean season. These vegetables are not only delicious – especially when you buy them fresh – they are low in calories (32 calories per 100 grams), rich in fiber, vitamin B9 (also called folic acid) and potassium. In our recipe, their fresh flavor goes perfectly with the lactic acidity of goat cheese and the sweetness of raspberries.

Ingredients for 4 people
250 grams of fresh goat cheese
350 grams of green beans
125 grams of raspberries
1 handful of raisins
1 c. Dried cranberries at s
1 c. gables at s
1 c. Cashew nuts in s
1 c. Za’atar (Lebanese spice mix) in s
1 c. Sesame seeds in s
2 sprigs of basil
2 tbsp. Olive oil in s
Salt and pepper
For the sauce:
1 lemon
10 c. Olive oil in s
2 tbsp. Liquid cream at s

Recipe steps
1. Beans
Rinse the green beans and steam them for 8 to 10 minutes.
2. Meatballs
Crush the cranberries, almonds and pine nuts with a knife, add the za’atar, sesame seeds, salt and pepper.
Take a small spoonful of goat cheese, roll it between your palms, coat it with olive oil with a brush and roll it into mince then place it on a plate and continue with the rest of the ingredients.
3. Sauce
Add lemon juice, oil, cream, salt and pepper. Mix
Pour over green beans, mix with raisins and raspberries.
Add goat meatballs and serve with chopped basil.
