Good juice and fresh herbs
” For some dishes, the sauce is important, for a fruit salad – the juice.” – warns the confectioner. Her favorite recipe? “You can squeeze a small Corsican grapefruit and mix it with a few mint leaves or other fresh herb, rubbed through a mortar. Passion fruit is perfect for a little kick. Cyril Lignac obviously uses seasonal fruits to prepare his salad. Apricots, peaches, cherries, strawberries… The harvest period is not only for fruit. Aromatic herbs also have their own harvest season. The pastry chef takes the opportunity to add fresh herbs. Verbena, lemon balm, mint… Again, there’s plenty to choose from.
