During the summer season, we often want to eat fresh and stock up on good vegetables. To (re)discover delicious meal ideas, here are 9 light recipes for summer evenings.

During the day the weather was nice and warm, and in the evening, we wanted to eat fresh and delicious products. Summer is a season rich in fruits and vegetables, which go together to create light and delicious compositions. To prepare small meals in the evening, you can choose:

Tomatoes filled with cream cheese
For 4 people. Wash 4 tomatoes. Using a knife, cut off the cap and empty the flesh into a bowl using a spoon. Chop 1 shallot. Mix 200g of cream cheese with the shallot and a little tomato pulp (keep the rest for the sauce). Add fresh basil, mint or parsley. Season with salt and pepper before stuffing the tomatoes with the mixture. Replace their lids before serving.

Salmon and mango tartare
For 4 people. Cut into small cubes 400 g salmon fillet and 1 mango. 1 red onion chopped. Chop a few sprigs of fresh chives and a little parsley. Mix the ingredients, add the juice of 1 lime, as well as salt and pepper. Arrange the preparation in a pastry circle or bowl to mold the tartare. Arrange everything on a plate before serving.

Pasta and Grilled Salad
For 4 people. Wash 2 bell peppers and a dozen large cherry tomatoes. Cut the pepper in half and cut into slices. Peel and chop 1 onion. Arrange the vegetables in an oven dish, drizzle with oil, sprinkle with some herbs de Provence and bake for 30 minutes. Meanwhile, cook 250g pasta in boiling salted water. To prepare the vinaigrette, pour 4 tbsp into a bowl. olive oil in s, 3 tbsp. s of lemon juice, 6 minced basil leaves, 1 tbsp. c. Mustard, 1 clove garlic, salt and pepper powder. Once the food is cooked, put it together in a salad bowl and add the vinaigrette before serving.

Pizza-style eggplant slices
For 4 people. Wash and slice 2 aubergines (lengthwise or widthwise). Brown them in a pan with olive oil. Then place the slices on a baking sheet lined with parchment paper. Garnish the slices with a little tomato coulis, a few small pieces of ham, a little grated cheese or mozzarella, small pieces of cherry tomatoes, oregano, salt and pepper. Drizzle with olive oil before placing in the oven at 200°C for 10 minutes. Add few basil leaves before serving.

Bruschetta with guacamole, shrimp and cherry tomatoes
For 4 people. In a bowl, pour the mashed flesh of 2 avocados, the juice of ½ lemon, ½ chopped red onion, 1 pressed garlic clove, salt, pepper, and Mexican seasoning (or cumin and paprika). mix together Shell 16 shrimp. Brown in a pan with a little olive oil. Add a little Mexican seasoning before the end of cooking. Cut a few cherry tomatoes in half. Brown 8 slices of bread. Spread with guacamole, add shrimp and cherry tomatoes. Serve with salad.

Bean, strawberry and feta salad
For 4 people. Cook 500g of beans in boiling salted water for 3 minutes. Then run them under cold water before peeling them. 125g strawberries 2, as well as 125g feta and 1 red onion cut into small cubes. Watermelon, cured ham and mozzarella salad
For 4 people. Wash 100 grams of arugula. Dice 1 watermelon and 150 grams of mozzarella. Prepare a vinaigrette with 4 tbsp. olive oil in s, 2 tbsp. s in balsamic vinegar, salt, pepper and a few minced basil leaves. Arrange ingredients on 4 plates, add 1 to 2 slices of raw ham and a little vinaigrette.

Cucumber and Avocado Gazpacho
For 2 people. Peel 1 cucumber, 1 avocado, 1 garlic clove. Squeeze the juice of 1 lemon. Mix the ingredients with 20cl of water and a few mint leaves. Test the salt and pepper. Refrigerate before tasting.
